Lipase catalyzes the hydrolysis of ester bonds in triacylglycerols (TAGs; i.e.; oils/fats) to produce free fatty acids; diacylglycerols; monoacylglycerols; and glycerol. Lipase (MS grade) is commonly used in enzymatic reactions to perform structural analysis and isomer differentiation of complex lipid mixtures (especially glycerides) prior to mass spectrometry analysis[1][2].
